Easy, Fresh Zucchini Spaghetti!

Ready to try an easy, fresh zucchini spaghetti that is tasty and ready in 30 minutes?  I’m not talking about sauteing some zucchini and adding into a spaghetti primavera.  (Which is yummy, too!) I’m talking about making spaghetti using fresh zucchini as the noodles! And, the very best part, the kids loved it! Loved it, as in ate.it.all!

A few months ago, Santa left a brand spanking new spiral slicer for me!  Now it’s mid-summer and I finally have zucchini, even if they are small!  Finally, a chance to come up with a new recipe for the fam!

I grabbed my veggie-loving son and into the kitchen we went! My son was so excited to cook up some “cucumber cousins”. He surely loves his veggies and I thought since this is a new veggie dish, he is the perfect one to be Mommy’s helper for this recipe!

Easy, Fresh Zucchini Spaghetti!

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 3 cups

1/2 cup - 1 cup as a side dish

Easy, Fresh Zucchini Spaghetti!

Ingredients

  • 1 Tb Olive Oil
  • 1 Tb Butter
  • 2 tsp Minced Garlic
  • 1/2 c Chicken Broth
  • 1/4 c White Wine (*not necessary)
  • 2 c Grape Tomatoes
  • 3 sm Zucchini (or 1 reg sized one)
  • Palmful of Fresh Basil
  • 1/2 Tb Fresh Ground Pepper
  • Dash Salt

Instructions

  1. Saute minced garlic in olive oil and butter
  2. Add tomatoes and cook until they open
  3. In the meantime, peel and slice zucchini using spiral slicer (or a julienne peeler)
  4. Add chicken broth (& wine) and bring it to a simmer with the tomatoes
  5. Sprinkle zucchini with salt and pepper
  6. Add zucchini in pan with tomatoes and broth
  7. Cook until zucchini softens and glistens from butter, stirring occasionally
  8. Toss in fresh basil and drizzle with olive oil
  9. Serve immediately & enjoy!

Notes

Add some variety, use summer squash or eggplant!

The whole experience of making the dish was so much fun. For the first time, we made a true 30 minute meal that was simple and tasty!
