Lemony Blueberry Bisquick Biscuits

I always look forward to blueberries in August! And I love lemon, too. This weekend gave me the perfect opportunity to try out something new and quick. My Lemony Blueberry Biscuits are drop biscuits made with Bisquick biscuit mix, lemons, blueberries, and lemon yogurt. Very simple and very quick; I was done in 15 minutes.

Lemony Blueberry Bisquick Biscuits

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 12

Lemony Blueberry Bisquick Biscuits

Ingredients

  • 2 1/3 c Bisquick
  • 6 oz Lemon Yogurt
  • 1 tsp Minced Lemon Zest
  • 1 c Fresh Blueberries (or frozen)
  • 1/4 c Milk
  • For the lemon drizzle:
  • 1 c Confectioner's Sugar
  • 1 tsp Minced Lemon Zest
  • 3 -4 tsp Fresh Lemon Juice

Instructions

  1. Preheat oven to 425 degrees. Line baking sheet with parchment paper.
  2. In a large bowl, mix Bisquick, lemon yogurt, zest, and milk til all ingredients are moistened. Fold in blueberries.
  3. Drop by the spoonful onto parchment paper.
  4. Bake for 10 minutes @ 450 degrees. They are a very light golden brown & some of the blueberries burst a little!
  5. For the lemon drizzle:
  6. Mix ingredients together and drizzle away!

You may want a little lemon drizzle on top. I couldn’t resist adding more lemony goodness!
